Chinati Vergano

Italy · Piedmont

Mauro Vergano brought a chemist’s precision and a perfumer’s nose to the world of wine. After a career in the flavors and fragrances industry, he turned his lifelong passion for aromatized wines into a second vocation, producing small batches of Chinato in the late 1970s before officially launching his first bottles after retirement. From there he expanded into innovative creations: “Luli” (2003), the only Moscato-based Chinato on the market; the Americano, a vermouth-style aperitif built on the rare Grignolino grape; and a more traditional Piemontese Vermouth. Each bottling reflects his meticulous sourcing—herbs and spices from both local fields and abroad, paired with wines from respected growers like Giuseppe Cortese, Vittorio Bera, Cascina Tavijn, Ezio Cerruti, and La Morella. Though Mauro retired again in 2019, his legacy continues through his nephews Tommaso and Pietro, who are carefully preserving his artisanal approach. Production remains tiny, but the spirit of experimentation and authenticity that defined Vergano’s work lives on in every bottle.
