Founded in 2001 by Julián Ruiz Villanueva, Esencia Rural is a pioneering natural winery located in Quero, Toledo. Julián is the godfather of Spanish orange wine. Actually, in his eyes it's just white wine. His family has been making it this way long before "everybody and their mother," as he puts it, started making orange wine. The estate spans 34 to 50 hectares, cultivating native grape varieties such as Airén, Tempranillo, and Tinto Velasco, some from ungrafted vines over 140 years old. Emphasizing minimal intervention, the winery employs spontaneous fermentation with native yeasts, avoids additives and sulfites, and often utilizes amphorae for aging.
