Hatzidakis

Haridimos Hatzidakis, originally from Crete, studied agronomy and oenology in Athens before moving to Santorini in 1991 to work with J. Boutaris and Sons, where he eventually became head oenologist. There he met and married Konstantina Chryssou, and together they founded Hatzidakis Winery in 1997 using her family’s abandoned vineyards in Pyrgos Kallistis. Known for crafting powerful, authentic expressions of Santorini’s terroir rather than the reductive international style, Hatzidakis pioneered single-vineyard bottlings and was the first to release monovarietal Aidani and Mavrotragano wines. After his tragic passing in 2017, his daughter Stella and a team of women oenologists, including Helena Alevra and Stella Papadimitriou, carried forward his legacy. Today, from a newly built underground winery in Pyrgos, Hatzidakis Winery continues to produce small but highly distinctive cuvées that deepen the exploration of Santorini’s microclimates and heritage varieties while honoring the island’s traditional wine styles.
