Henri Chauvet left a career in banking to pursue natural winemaking in Auvergne, founding his domaine in 2021. Farming 10.5 hectares in Boudes under organic conversion, Henri works with Gamay, Pinot Noir, and Chardonnay on volcanic, marl, and limestone soils. Each plot is vinified separately with native yeasts, whole clusters, no fining or filtration, and minimal sulfur.
