In Catalonia’s Penedès, Joan Rubió — formerly of Recaredo — has embarked on his own biodynamic project, Sota els Ametllers (SdlV). Focused on indigenous varieties like Xarel·lo and Sumoll, his wines are natural, energetic, and deeply expressive of terroir. Rubió champions biodiversity and low-intervention methods, creating bottles that are both soulful and innovative, a benchmark for the new Catalan wine movement.
